  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line a sheet pan with parchment paper.
  2. Season Eggplant with salt, pepper, and spices. Arrange on the prepared pan.
  3. Add vegetables around the protein. Drizzle everything with oil and toss to coat evenly.
  4. Bake for 35–40 minutes, or until the protein is cooked through and the edges are golden. Flip halfway if needed.
